Description
......Sturgeon are a group of 23 species of large, sluggish fishes, some reaching a length of more than 4 m (13 ft). They live on small creatures and plants, which they suck in; the mouth is protractile and without teeth. The body is long and narrow, usually with several rows of bony shields.
......The upper lobe of the tail is much larger than the lower. All species inhabit fresh waters and seas of northern regions, and all supply valuable commodities, for which they are regularly captured on a large scale. The great Russian beluga, or huso, once abundant in the Danube, Volga, and other large rivers emptying into the Black and Caspian seas, has furnished most of the salted roe called caviar.
......The air bladder is used for making isinglass, a gelatinous substance used as a clarifying agent and in jellies and glue.
