My family prefer their tea cold during the summer months, but I still enjoy drinking them hot (year round). The majority of Tea and Wares teas are packaged in 2 lb. reseal able packaging that keep it fresh for up to 2 months. We also package tea in 2 oz. tins for people who’d prefer to sample.

The price of tea varies based on quantity, variety and origin. When drinking tea regularly, a 2 lb. bag last about a month and cost considerably less than coffee per cup. Step 1 First, you might want a general idea of what kind of flavor you are looking for. There are flavored and unflavored teas. The main types of tea (in order of most to least processed) are Black, Oolong, Green, White, Rooibos, and Herbal tea.

Step 2 Black tea is the strongest of the types. These are the highest in caffeine with about 20% the amount caffeine of a cup of coffee. Teas like English breakfast, Black Chai and Darjeeling are examples of Black tea. They are great for the morning or people trying to switch from coffee to tea.

Step 3 Oolong tea is somewhere between and Black tea and a Green tea, with 15% the amount of caffeine of a cup of coffee. They are known to help with digestion and weight loss and are traditionally drank before or after a meal. They can have a slight floral taste naturally.

Step 4 Green tea is next with 5% - 10% caffeine. They are probably the most publicized at the moment. Known for their high antioxidants and cancer fighting qualities. it is a common misconception that green tea is bitter. If brewed correctly it should be vegetal, floral, or nutty tasting. This all depends on the type. Japanese is more green and vegetal, where as Chinese is usually more nutty or floral.

Step 5 White tea is the lowest in caffeine with only 1% - 3%. White tea is the most rare and is it also the cream of the crop. It is the purest form, and barely processed, lightest and taste and the highest in health benefits.

Step 6 Herbal and Rooibos (south African 'red' tea) are both caffeine free. They are generally the most flavorful. Most Herbal teas have a fruity or floral flavor and usually contain flowers and dried fruits or herbs. Rooibos is known for its health benefits and is said to be the highest in antioxidants. These teas are also great for children.

Step 7 Once you have decided on a type of tea you would like to purchase. You may want to look at and smell the tea. It may sounds strange if you have never purchase loose tea before, but tea taste very similar to the way it smells. Most tea descriptions give you a fairly good idea of the actual taste. A Samovar is a heated metal container traditionally used to heat and boil water in and around Russia, as well as in other Slavic nations, Iran, Kashmir, and Turkey. Since the heated water is usually used for making tea, many Samovars have an attachment on top of its lid to hold and heat a teapot filled with tea concentrate. Samovars are said to have been invented in Central Asia, though their origin is a matter of dispute. For example, some argue that it is purely a Russian invention given that the Samovar appeared in Iran not later than in 18th century, and it bears the same Russian name "Samovar". Though traditionally heated with coal or charcoal, many newer Samovars use electricity and heat water in a similar manner as an electric water boiler. Mango Iced Tea Recipe

Ingredients:

1 1/2 quarts cold water 6 high quality black tea bags 2 cups mango nectar Sugar 1/4 cup fresh mint leaves Thinly sliced mango

Directions

Bring water to a boil, turn off heat add tea bags and steep until tea is dark, about 5 minutes. Remove bags, add mango nectar and add sugar, to taste. Stir until sugar is dissolved. Place in pitcher and add mint leaves. Pour over ice and garnish with mango slices.

Summer Tea Sandwiches

Allow 4 to 6 cut sandwich servings for each person. Choose the best-quality white or wheat bread as possible. Never serve end slices. Freezing the bread before cutting and then spreading makes for easier handling.

Bread slices should be lightly buttered not matter what the filling. Unsalted butter should always be used. Butter should be at room temperature before spreading. Sandwiches will not become limp and soggy as readily if you spread the butter to the edge of the bread. Cut the crusts off the bread with a long, sharp knife after the sandwiches are filled. This keeps everything neater. Since tea sandwiches should be delicate, cut each sandwich in half on the diagonal or into thirds or fourths before serving. Decorative shapes can be made with cookie cutters.

Making Sandwiches Ahead of Time:

If you need to make tea sandwiches in advance and need to keep them from drying out, cover them loosely with a sheet of wax paper and then place a damp kitchen towel over the wax paper (never place a damp towel directly on top of the bread because the sandwiches will become soggy). Refrigerate. When ready to serve, remove from refrigerator. Uncover sandwiches just before serving.

Oolong Teas

OOLONG TEA is a semi-fermented or semi-oxidized (semi-green) tea that falls between green tea and black tea on the fermentation continuum (green tea does not ferment at all, black tea ferments for two to four hours). The fermentation process is interrupted in the middle. Produced in the Fujian province of China and in Taiwan, Oolong tea is characterized by lighter brews and larger leaf styles.
