The JACKSON COFFEE CO. was started in response to the need for a local roaster of exceptional quality coffees. Located in historic Jackson, Michigan, we focus on freshness, beef quality, and openness with our customers.

We operate with this goal in mind: To provide the highest quality coffees available. With our experience and passion for coffee, we offer unparalleled customer support and service.

We are dedicated to providing freshly roasted coffee, freshly brewed coffee, and great tasting bakery products in a real coffee house atmosphere. We accomplish this by roasting coffee, fresh daily, in our store. Each day, our coffee is roasted in-house with beans of the highest quality from the finest coffee-producing regions around the world. Freshness is one of our main focuses when roasting such specialty varieties of coffee.

We use a traditional European-style drum roaster. This method ensures that each batch of coffee that we roast is roasted to perfection. Because of our attention to detail, and careful roasting techniques, we can take great pride in the art of roasting each batch that bears our name consistently. This is why we are happy to invite you to come in and discover what we mean when we say "fresher is better".

The JACKSON COFFEE CO. is committed to bringing you the finest coffees. What does this mean? This means that we do not sell the same roasted coffees found getting stale on shelves at gourmet shops, delis, and supermarkets. We buy our coffees green (unroasted), from coffee brokers across the country in order to bring you a large variety of the finest coffees at affordable prices.

Also, we do something that very few coffee shops do. We carefully roast our coffees in our own store, in very small batches each and every day. We do this in order to bring you a variety of coffees that are always fresh. Did you know that, with each day that passes after the beans are roasted, coffee is losing its flavor? Age makes all the difference in the quality of the coffee that you are paying for! A happy consequence of roasting our own coffee is that our prices are as good as our coffee.

We are fanatics about the high quality standard of our coffee. We cup coffees that are truly the best, and we choose very carefully from among these. Price is never a factor in assessing quality, and we only buy the best.

Part of our fanaticism stems from being truthful about our coffees - we have no "secret" blend. We are confident that our quality, freshness, and the way we carefully roast each batch of coffee to perfection cannot be duplicated by others - so we have no reason to keep any secrets. You should know exactly what you are paying for.

At the JACKSON COFFEE CO., we have gone to great effort and expense in order to bring you what we believe are the finest beans available. When you enjoy our coffee, we think you will appreciate our commitment.

Coffee Lingo

Definitions for the vocabulary to describe the flavor of a coffee brew:

Acidity -- A desirable sharp and pleasing taste, particularly strong with certain origins.

Bitter -- This taste is considered desirable up to a certain level and is affected by the degree of roast and brewing procedures.

Body -- This descriptor is used to describe the physical properties of the beverage. A strong but pleasant full mouthfeel characteristic as opposed to being thin.

Caramel -- This aroma descriptor is reminiscent of the odor and flavor produced when carmelizing sugar.

Cereal/Malty/Toast-Like -- This descriptor includes aromas characteristic of cereal, malt and toast. It includes scents like grain and malt extract. It also includes the aroma and flavor of fresh baked bread and freshly made toast.

Chocolate-Like -- This aroma descriptor is reminiscent of the odor and flavor of chocolate. It is an aroma that is sometimes referred to as sweet.

Earthy -- The characteristic odor of fresh earth, wet soil or humus. This taste is considered desirable up to a certain level.

Floral -- This aroma descriptor is similar to the fragrance of flowers. It is associated with the slight scent of different types of flowers including honeysuckle, jasmine, dandelion and nettles. It is mainly found when an intense fruity or green aroma is percieved, but rarely found having a high intensity by itself.

Fruity/Citrus -- This aroma descriptor is reminiscent of the odor and taste of fruit. The natural aroma of berries is highly associated with this attribute. The perception of high acidity in some coffees is correlated with the citrus characteristic.

Nutty -- This aroma descriptor is reminiscent of the odor and flavor of fresh nuts.

Smoky -- The odor associated with smoke when burning wood. This descriptor is used to indicate the degree of roast commonly found by tasters in dark roasted coffees.

Spicy -- This aroma descriptor is typical of the odor of sweet spices such as cloves, cinnamon and allspice.

Sweet -- This is a basic taste descriptor characterized by solutions of sucrose or fructose which are commonly associated with sweet aroma descriptors such as fruity, chocolate and caramel.

Winey -- This aroma is used to describe the combined sensation of smell, taste and mouthfeel experienced when drinking wine. It is generally perceived when a strong acidic or fruity note is found.
